Blogmas Day 8: Spiced Christmas Cookies.

 Okay so you caught me, these aren't cookies, they're biscuits but Christmas Cookies had a better ring to it than Christmas Biscuits did. These are super quick, easy and simple to make and tasty too! The recipe is flexible so if needed you could make it vegan/dairy free! Here's the recipe for my Spiced Christmas Cookies:

Cookies: I made between 25-30 small to medium sized cookies 
Time: 10-15 Minutes in oven (plus time to decorate) 

Ingredients:

  • 175g Plain Flour
  • 100g Butter/margarine
  • 50g Caster sugar 
  • 1-2 Tablespoon milk (I used almond)
  • 1-2 Teaspoon Vanilla essence
  • Mixed Spice
  • Nutmeg
  • Cinnamon
  • Ginger
  • Icing sugar to decorate.
  • sprinkles 

Instructions:

  1. Pre heat oven to 150 degrees C 
  2. Cream butter and sugar together in a bowl, until fluffy.
  3. Mix flour with your mixed spice, cinnamon, ginger and nutmeg. The amount is up to your personal tasted but I used roughly a flat teaspoon of each.
  4. Gradually stir in flour a little at a time adding in your milk and vanilla essence as you go.
  5. Once thats been mixed together it should start to be looking dough like, if it's too wet just add in a little bit more flour and knead it on a floured surface until the texture is perfect for rolling. 
  6. Roll out your dough, the thickness can also be a personal preference but bare in mind that the thicker they are the longer they will take to cook. Then use whatever shaped cutters you've decided on. Alternatively if you don't have any, you can make your own shapes out of cardboard and then cut the dough out using a knife.
  7. Finally pop into the oven on a tray lined with baking paper and cook for 10-15 minutes.
  8. Once out leave to cool before decorating and voila, quick and easy Christmas cookies.
