Blogmas Day 21: Spicy Veggie Sausage Casserole Recipe.

This is something I usually get my mum to make me every year as it's great comfort food! I love it so much I've stolen the recipe from her, with her blessing to share with all of you.

1 Onion
4 sausages
1 Tin of tomatos 
1 Tin of red kidney beans 
1 Tin of baked beans
1 Tin of spicy taco beans or similar 
1 stock cube 
Garlic granules  
Smoked paprika 
Crushed chillis 
Salt & pepper. 


  1. Fry onions in a sauce pan, and grill sausages as required.
  2. Once onions are cooked add the tin of tomatos, garlic granules, paprika and chillis into the pan and using the empty tomato tin add in two tins of water and bring to the boil. 
  3. Once boiled add in a stock cube and simmer for 10-15 minutes. 
  4. The add the cooked sausages cut into quarters, the baked beans, kidney beans and taco beans and simmer for another 5-10 minutes. If you need to thicken it you can add bisto granules or if you want it thinner add more water. Then just add salt/pepper/any more flavourings to taste. 
  5. You can serve it on its own or with anything you like, this time around I chose a jacket potato and broccoli but its also great with potato actually in the casserole, and cabbage too!
