Blogmas Day 13: Spiced Ginger Flapjack Recipe.


I love ginger and I love flapjack so it's only right that I combine the two. This was a hard post to put together as my flapjack recipe that I always make has no measurements, I just throw everything into the pan until it looks the right consistency and then bang it in the oven, I've seemed to perfect it over the years. After a little bit of science and maths I've managed to work out the actual measurements. As most of my recipes this one can easily be made vegan/dairy free and tastes just as good. 

Ingredients:

  • 150g Butter
  • 130g Brown Sugar
  • 200g Golden Syrup 
  • 400g Oats 
  • 90g Crystallised Ginger 
  • Ground Cinnamon (around a teaspoon)
  • Ground Ginger ( As much/less as you want, make sure to taste) 
  • White Chocolate (half a bar for drizzle) 
The tin I used is an 7 1/2" x 3" square cake tin, the mix fills a little bit over half of the tin.

Instructions:


  1. Pre heat the oven to 175 degrees C and grease or line your tin with baking paper.
  2. Melt the butter and sugar into a saucepan on medium heat stirring to make sure it doesn't burn. Once it's mixed together turn the heat down to low and add in the golden syrup, stirring until melted. 
  3. Turn off the heat and add in your oats, crystallised ginger, ground cinnamon and ground ginger. Then mix until all combined. You want the oats so soak up the mix but still be sticky to touch. You may or may not need to add in a few more oats as I did. 
  4. Pour into the tin and even out making sure the mixture is even and then put into the oven for 30-40 minutes, making sure to check on it. 
  5. Once it's out leave to cool completely before decorating. 
  6. Eat and enjoy!
