Quick & Easy Vegan Peanut Butter Cookies.



When it comes to treats I'm definitely more of a savory person, but every now and then I do like to induldge in something sweet. I wanted a super quick and easy cookie recipe so I had a play around with various different ingredients and created this one! I'm not vegan so it was completely by accident that this turned out to be a vegan recipe. I am however lactose intolerant and although I can tolerate a certain amount of dairy products, wherever I can I try to make substitutions. 

Prep time: 5 mins 
Cooking time: 10-20 mins
Serving: Around 8 cookies depending on size

Ingredients:
  • 1/2 cup of peanut butter
  • 1/3 cup of plain flour
  • 1/2 cup of coconut sugar 
  • 3 tbsp of almond milk
  • 1/4 tsp bicarb 
  • Pinch of salt
Optional:
  • Chocolate
  • Nuts/seeds
  • Raisins
Need:
  • Baking tray
  • Grease proof paper
  • Mixing bowl
  • Ice cream scoop
  • Wooden spoon

Instructions:
  1. Pre-heat your oven to 180C/350F/Gas mark 4.
  2. Line a baking tray with grease proof paper.
  3. Combine flour, sugar, salt and bicarb into a bowl and roughly mix together.
  4. Add in the peanut butter and almond milk and mix until all ingredients are combined. If your mix is too dry, add in another tbsp of almond milk.
  5. Mix in any of your optional extras, I chose chocolate and smashed the bar into small chunks so that there would be an even amount of chocolate in each cookie.
  6. Use the ice cream scoop to out balls of cookie dough onto your tray, this helps make sure all your cookies are roughly the same size. Also make sure you leave a gap between each cookie to prevent them sticking together as they expand.
  7. Take a fork and gently press down on the tops of the cookies to flatten them slightly, this will save on cooking time.
  8. Put your cookies into the oven for 10-15 mins for soft cookies and 15-20 mins for slightly harder chewier cookies.
Best served still warm (but still pretty good when eaten cold as a midnight snack).
